Plaza teardown clearing way for 'Stacked' pancake house?

Property map posted on plaza owner's website shows five retail units will be built where Pennington's once stood; popular breakfast chain appears to be one of the future tenants

Some locals will flip over this news: The demolition of the former Red Lobster restaurant appears to be clearing the way for a Stacked Pancake & Breakfast House.

A wrecking crew started ripping down the old structure on Victoria Day weekend, triggering the obvious question: What will replace it?

Here are the facts SooToday has managed to stack together so far.

The entire strip mall — which includes Metro, Value Village and now Princess Auto — was purchased in 2020 by Plaza Retail REIT, a publicly traded real estate investment trust that owns 246 properties across Canada.

An overhead map of the property posted on the company's website (and in the photo gallery above) shows that five retail units will be built where Red Lobster, and more recently Pennington's, once stood.

Nothing is official yet, but the breakfast chain's website lists 248 Northern Avenue, Unit 1, as its sole location in Sault Ste. Marie. Stacked has yet to reply to a request for comment, asking when the new restaurant hopes to open.

Started in Innisfil, Ont., in 2014, the popular franchise now boasts more than a dozen locations across Ontario.
